Red Bird Brand candies are not special because of a complex secret recipe-it's sugar, invert sugar and flavoring, peppermint oil being the most popular. The secret is in... The pure cane sugar (no corn syrup or cheap sweeteners!) is mixed with invert sugar and water in a huge copper pot and bubbled to 300 degrees where it becomes a glorious golden glacier. The flavoring is added and then it is transferred to the pulling machine where mixing with air creates the snow white confection. The next step is the hand shaping and adding the famous stripes. Smaller amounts of the golden nectar are mixed with coloring and added by hand to the white log. Then it is squeezed out and cut into the puffs or sticks. Now it is ready to be placed in the handmade oak racks for aging. Here the expensive process of aging occurs. Placed in the racks in a humidity controlled environment, this is the step that gives the candy the soft, melt-in-the-mouth goodness. Much more than the sum of its parts, this simple sugar treat is special because of the traditional caring way in which it is made.
